Eggs and health




Eggs contain all the essential amino acids in the correct proportions and are a good source of complete protein.They are also a significant source of vitamin B2,B12,D,E and folate in addition to iron.
The iron in eggs yolks,like the iron find in meat,is easily absorbed by the body.
Eggs contain other vitamins and minerals in smaller amounts,including vitamin B1 and B6,phosphorus and zinc.Eggs are also one of the best sources of choline,a substance involved in transport of fat in body.Choline is also important for the manufacture of phospholipids,which are the major structural components of cell membranes.
Most of the vitamins and minerals in eggs are found in the yolk,but the white is also a good source of protein and contains little fat and no cholesterol.

Of all the foods that are eaten today,eggs are the main source of cholesterol.Yet,eggs are relatively low in calories and saturated fat (egg white does not contain any fat).
Nutritionists use to advice that eating eggs should be limited,but this advice has been revised.Research also shows that there is no link between egg consumption and risk of cardiovascular disease.

Cholesterol is not found in large amounts in many foods,exept in eggs and in offal such as liver and kidneys.The cholesterol in these foods does not usually make a great contribution to blood cholesterol levels.If you have a high level of blood cholesterol is wise to limit eggs to about three a week.If you need to reduce the blood cholesterol level you have to reduce the total amount of fat you eat..Eating a high fiber diet may also help to reduce the amount of cholesterol that is alsorbed into bloodstream.

 


There is no limit in how much white egg you can eat,so look at ways how to use more egg white in your cooking.
When cooking eggs avoid adding butter and cheese,which will add saturated fat.

Some eggs may contain salmonella bacteria,which can couse serious illness.Symptoms of salmonella poisoning include  abdominal pain,vomiting and diarrhea.
In order to minimize your risk at infection,always store the eggs in refrigirator and wash your hands after handling eggs.Cook the eggs till both yolk and white are firm.
Babies and toddlers,pregnant women and thos ewho are already unwell should not consume raw egg  (home made mayonnaise,ice cream and mouse).
